I think the only one I probably wouldn't open would be something like the Appleseed w/ figure one. I don't have it, I just have the steelbook. If I ever get it, I'm sure I wouldn't open it since I already have the steelbook. I do have the Hellsing vol 1 with Arucard figure, and it's still sealed for now. I plan on opening it though 'cos it's simply shrinkwrapped together, unlike the Applseed one encased in plastic. I want to open mine, but can't bear the thought of the future price of an unopened copy the steelbook being extremely high. So I pretty much just open a few.
