Plus, as was mentioned, the force could simply have been another name for telekinesis which would be scientific. (Could have, if you ignore the midichlorians.) I'd have to say one litmus test for sci-fi or fantasy is do they use "practical" or "fantastic" methods to achieve the currently impossible. Star Wars clearly demonstrates using practical means for the most part (engines, guns, machinery in general). And I still say Princess Bride makes less sense on there than Wonka.
